If you’ve ever been to On the Mark, then you already know that everything they do comes from a place of love and inspiration. Together, along with former business partner Mark Van Laanen, Brix and Bubba Espejo built their vision of a shop that embodies every food lovers dream. From sandwiches and charcuterieboards, to fine wines and sauces, every product is hand curated with a food connoisseur in mind.

 

Brix and Bubba met at just 11 years old at La Quinta Middle School. From there, they remained best friends until their mid-twenties when a night of too much champagne became the start of something much bigger. Brix (pronounced Brie like the cheese… yes, we do see the irony) began her career as a dental hygienist and continued in corporate business and financial planning. Bubba (born John Jr. but has been “Bubba” since birth) had a much different path, with his career in the culinary industry as a trained chef. Together, they have traveled all over the world to curate the best that the culinary industry has to offer. Being from small towns themselves, their focus has always been to support small businesses and the local community as much as possible.

 

In 2021, Brix and Bubba welcomed their first child- a daughter named Ariah, and in 2023 she was followed by her little brother Jax. Their births ignited an entirely new passion for growing the business and helping other small businesses flourish as a result. They even inspired the couple to launch their newest passion project in Fall of 2024, “The Oyster CARTel”- a mobile cart to bring fresh shucked oysters, caviar and champagne to events and parties, much like they enjoy themselves.

 

Although their plates are fuller than ever, the two relish in every moment and embrace the chaos with immense gratitude. They continue to grow and develop more fun events, products, and menu items as the inspiration arises.
